  • Cover the cabbage with a lid and place a heavy object such as a stone, glass water bottle or wooden press on top of it.

Last but not least, it is important to create the right conditions for storing sauerkraut. Here's what to consider:

  • Temperature: The optimal temperature for storing sauerkraut is between 0 and 5 degrees Celsius. At higher temperatures, cabbage may over-acidify or lose moisture, losing its properties. At low temperatures, there may be a risk of freezing.
  • It is better to store sauerkraut in a dark place, as light can degrade its taste and color. Therefore, do not place dishes with cabbage in direct sunlight or near sources of artificial light.
  • Sauerkraut needs to be kept at an optimum humidity level. Avoid storing in dry or ventilated places. Regularly check the level of brine in the vessel and, if necessary, refill it.
