  1. Kefir. It should not be completely fresh - 2-3 days old. Such kefir makes excellent pies, fritters, and pies that are fried in a pan.
  2. Baking powder can replace yeast. If you have a store - great. If not, you can prepare it yourself. To do this, mix 5 g of soda, 3 g of citric acid, and 12 g of flour (the amount is calculated for 1 kg of flour).
  3. Soda. Even our grandmothers replaced yeast with soda. Before adding it to the dough, it must be extinguished: pour vinegar or citric acid.
  4. Beer. There is yeast in beer, so the pastry on it turns out loose. To prepare a beer starter, mix 250 ml. of beer, 250 g of flour, and 20 g of sugar. It is necessary that the mixture ferments for a day.
  5. Leaven. For leaven, mix 200 g of flour, 200 ml. of warm water, and 20 g of sugar. Leave in a warm place to ferment.
