In late fall, when many tomatoes have not had time to ripen, there is a great opportunity to make a delicious Korean-style snack of green tomatoes for the winter.

To diversify the taste of Korean snack, you can add other aromatic spices and sesame seeds. Let's take a look at the step-by-step recipe for this dish for home cooking from the website vikna.tv.

Ingredients:

  • Green tomatoes - 2 kg
  • Sweet pepper - 2 pcs.
  • Onions - 1 pc.
  • Parsley and cilantro - a bunch each
  • Garlic - 2 heads
  • Carrots - 1 big one
  • Hot pepper - 1 pc.
  • Coriander and black pepper - 1 tsp. each.
  • Vegetable oil - 100 ml
  • Vinegar 9% - 60 ml
  • Sugar - 4 tbsp.
  • Salt - 2 tbsp.

Preparation:

  1. Start with the preparation of jars and lids. For this you will need 5-6 half-liter jars.
  2. Cut green tomatoes into quarters, cutting off the stalk. If the tomatoes are large, you can cut more pieces.
  3. Grate the carrots on a large grater. Slice sweet peppers into straws, onions and peppers into small rings. If you want to soften the spiciness of the appetizer, add half of the hot peppers without seeds.
  4. Heat the oil in a frying pan and fry the onions until golden.
  5. Fill a large bowl with all  of the chopped ingredients, add black pepper, coriander, sugar, salt, garlic and fried onions along with the vegetable oil.
  6. Add the chopped parsley and cilantro, pour in the vinegar and mix well once again. Leave it  to marinate for at least 8 hours, but overnight is best.
  7. You will get a lot of juice after marinating. Spread the mixture evenly into jars and cover each one with the juice that formed during marinating.
  8. Close the lids and sterilize the half-liter jars in a pot of water. Sterilize for 25 minutes after the water boils.
  9. After sterilization, close the lids, turn the jars upside down and cover for storage.
  10. Wait until the jars cool down, and then store the appetizer in a dark and cool place.
