Autumn fast food: a recipe for vegetarian pumpkin burgers
This is a delicious fall appetizer recipe from Shuba for vegetarians. These burgers are made from pumpkin pulp, bread, egg white, cheese, and parsley.
Ingredients:
Pumpkin - 500 g
Stale bread - 150 g
Milk - 150 ml
Egg white - 1 pc.
Grated Parmesan cheese - 50 g
Parsley, bunch - 1 pc.
Olive oil - 20 ml
Salt - to taste
Ground black pepper - to taste

Method of preparation:
Cut the pumpkin into slices and place them on a baking sheet covered with parchment paper. Bake at 180°C for about 20 minutes.
Cut the bread and soak it in milk for 15 minutes.
Mash the cooked pumpkin to a puree. Squeeze the bread out of the milk and add it to the pumpkin puree. Then pour in the egg white. Season with freshly ground pepper and salt. Sprinkle with grated Parmesan cheese and chopped parsley.
Stir the mixture.
Cover a baking sheet with parchment paper, lightly grease it with oil and spread the pumpkin mixture into burger shapes.
Bake at 180°C for 20-25 minutes.
