Kyivska Perepichka is a fast food restaurant that is quite popular among Kyiv residents and visitors. The first Kyivska Perepichka restaurant was opened in 1981. And for more than 40 years, it has not lost its popularity.

The recipe for this product is very simple - it is a sausage in dough fried in oil. And there is much more dough in the pierogi than the filling itself.

You can also make this dish yourself at home. You will need the following products:

  • Warm water - 350 ml
  • Sugar - 40 g
  • Dry yeast - 10 g
  • Flour - 530 g
  • Salt - 10 g
  • Sausages for the filling. The number of sausages depends on how much dough you knead.

Food expert Volodymyr Yaroslavsky advised the Shuba publication to prepare the pastry as follows:

  1. Dissolve sugar and yeast in warm water, no higher than 38 degrees. Let stand for 15-17 minutes.
  2. Add sifted flour, salt and knead the dough.
  3. Leave it in a warm place for one hour to rise.
  4. Punch down the dough and form 13-14 pieces of 70 grams each. Shape into a rectangular shape.
  5. Wrap the sausages in the dough, fasten the edges well, like dumplings. Leave in a warm place until the dough has risen 2.5 times.
  6. Heat odourless vegetable oil to 180 degrees. Fry for about a minute on each side until golden brown.
  7. Transfer to a paper towel to absorb excess fat.
