How to freeze vegetables for the winter to prepare first courses: step by step instructions
Freezing allows you to preserve all the beneficial properties of vegetables and fruits and enjoy their taste at any time. UaPortal will tell you how to freeze vegetables correctly.
What vegetables and fruits can be frozen
Fruits should be ripe, undamaged, and as fresh as possible. The following ones are suitable for freezing:
- Parsley and parsley root used for soups, sauces, etc. Wash the parsley and parsley root, dry them, chop finely, and put in plastic containers.
- Young green dill. Preparation for freezing is the same as for herbs.
- Celery root. Cut into long slices and place in a container. Wash and peel it beforehand.
- Leek. Peel off the top layers and cut into slices before freezing.
- Young asparagus beans. Cut off the ends of the beans and cut into large pieces.
- Broccoli and cauliflower. Wash, disassemble and freeze the smaller florets.
- Carrots. Wash, peel and chop.
Useful tips for freezing vegetables
- Before freezing, buy special containers or bags made of strong plastic.
- Sign each bag with the frozen product and indicate the date of manufacture.
- Be sure to wash and dry the vegetables before freezing.

Frozen mixes
To make it easier for yourself to prepare first courses, make vegetable mixtures.
- For borscht: cut into strips or grate red beets, carrots, parsley, celery, white cabbage and green beans;
- for lecho or vegetable stew: chop young zucchini, tomatoes, bell peppers;
- for soup: assemble the mixture depending on the composition;
- for salad: chop broccoli, carrots, green peas, young asparagus beans, celery stalks, root parsley, cauliflower or white cabbage.
