Pickled cucumbers are an extremely popular appetizer on the Ukrainian table. Housewives put a lot of effort into growing and preserving these vegetables for the winter, passing on the Ukrainian tradition to the next generations.

Adding ketchup to cucumbers often gives them a spicy flavor. However, the authors of the popular resource advise replacing it with strong mustard to add new flavor notes to this appetizer.

If you want to make pickled cucumbers for storage (for about 5 liter jars), you will need the following set of ingredients:

  • Cucumbers - about 2 kg;
  • Garlic - 10 cloves;
  • Black pepper (peas) - 10 g;
  • Allspice (peas) - 10 pieces;
  • Currant leaves - 10 pieces;
  • Dill umbrellas - 5 pieces;
  • Cherry leaves - 5 pieces;
  • Strong mustard - 130 g;
  • Water - 2 liters;
  • Sugar - 300 g;
  • Salt - 2 tablespoons;
  • Vinegar - 400 ml.

To prepare the cucumbers, follow these steps:

  1. Soak the cucumbers in cold water for 2-3 hours;
  2. In a saucepan, mix water, strong mustard (you can use Torchyn "Strong" or "Kozatska" one), sugar, salt, and vinegar. Bring to a boil and then remove from heat;
  3. Wash 5 liter jars. Put 2 cloves of garlic, 2 peas of black and allspice in each jar, and equally distribute currant leaves, dill umbrellas and cherry leaves. Fill the jars tightly with the soaked cucumbers;
  4. Pour the marinade over the jars and close them with lids;
  5. In a deep saucepan, lay a cloth or towel on the bottom, put the jars of cucumbers and pour water so that the level is at the widest part of the jars. Bring to a boil and cook for 7-10 minutes. After sterilization, remove the jars from the pot and close the lids;
  6. Turn the jars upside down, wrap them with insulation and leave them to cool (no need to turn jars with euro lids). Then store them in a cool place.
