If your cherry harvest was successful, it's worth preparing several jars of berries for the winter. Here are some step-by-step recipes for preserving cherries: jam, pickled cherries, and compote. So, get your sweet berries and jars ready and you'll have a real delicacy.

Cherry and lemon jam

To make cherry and lemon jam you will need:

  • 1 kg of cherries;
  • 500 g of sugar;
  • 100 g of lemon.

If you want to make more or less, change the proportions according to the recipe. This amount of ingredients willresult in about a liter of jam.

Rinse the cherries thoroughly and remove the pits and tail. Pour the cherries and sugar into a saucepan, mix thoroughly with a spoon, and put the saucepan in the refrigerator overnight.

The next morning, put the pot with the cherries and sugar on fire and boil them for five minutes. Then let it come off and add the sliced lemon. Boil again for five minutes and then leave to cool. Repeat this procedure again by boiling for another five minutes.

Prepare jars and lids by sterilizing them with boiling water. Fill the jars with the jam, put the lids on and turn them upside down. Cover them with a blanket and wait for the jars to cool. Store the jam in a dry and cool place.

Pickled sweet cherries

Pickled cherries require more ingredients, but the result is worth the effort. They can be consumed as an appetizer or dessert, as well as served with meat dishes.

You will need:

  • 1 kg of cherries
  • 500 g of sugar
  • 500 ml of vinegar
  • Spices such as bay leaf, pepper, salt, cloves, cinnamon

Sort and rinse the cherries, remove the pits and put them in a saucepan. In another saucepan, combine the vinegar, sugar, and spices. Put the saucepan over the heat and bring the marinade to a boil until the sugar and spices dissolve. Then pour the marinade over the cherries.

After the marinade has cooled, bring it to a boil again. Pour the pickled cherries into sterilized jars and store them in the marinade. The cherries will be ready in one day. The marinade can also be used for meat dishes.

Cherry compote for the winter

One of the easiest recipes for preserving cherries for the winter is to make compote. This drink will always delight you in the cold season. For cooking you will need:

  • 1 kg of cherries;
  • 2 cups of sugar;
  • 15 g of citric acid;
  • 5 liters of water.

Rinse the berries well, remove the seeds. Put 500 g of berries into jars. Pour boiling water over the jars and close the lids. Remember that the jars and lids must be sterilized with boiling water beforehand.

After half an hour, pour the water from the jars into a saucepan and bring it to a boil. Add sugar and citric acid to the jars. When the water boils, pour it into the jars. Turn the sealed jars upside down, wrap them in a blanket, and wait for them to cool.

After that, you can move them to a dark and cool place for storage.
